The blade
It is made of 3 different steel layers in what is known as a San Mai structure. This type of blade construction is similar to that of a damascus blade but with a lower number of steel layers. The core is made of AUS8 steel with 0.8% of carbon and 14.5% of chromium. The carbon enables the blade to have a high level of rigidity – 59 HRC in the Rockwell scale -, whereas the chromium is what enhances the blade’s resistance to oxydation. The combination of both elements makes the blade that easy to maintain and gives it a great cutting performance.
To increase even more the blade’s resistance to corrosion, the outermost layer of the blade is made of SUS1A-1 steel. In addition, the blade’s hammered surface gives the knife an original and authentic look. Each hammered surface is different, thus each single knife is guaranteed to be truly unique.
The handle
It is made of dark laminated wood with veinings that are unique to each knife. Its elegant look match perfectly with the blade’s look. It has an oval, ambidextrous design with a polished surface that gives you a smooth feeling when in your hand. It is suitable for both right and left handed cooks.
