The blades
They are made of Germain X50CrMoV15 stainless steel, and they are characterised for their durability and because they are easy to sharpen and clean. Thanks to its 15% of chromium content, the steel has great resistance to corrosion. The 0.5% of carbon content is what provides the hardness, and the molybdenum and vanadium help for the elasticity and resistance to strokes
With a hardness level of 56/58 HRC in the Rockwell scale, the knives can remain sharp for a good amount of time. The V-shaped edges are sharpened by hand with the use of a grinding leather band at a lateral angle of 15° (thus an accumulated angle of 30°). This explains why these knives can penetrate foods so easily and effortlessly.
For a truly original look, each blade has been hammered with a mechanical press that creates patterns that are unique on each single blade. Beyond the aesthetics, the hammered surface also serves to reduce the stickiness of the blade’s surface, which allows your to make cleaner cuts.
The handles
They are made of pakkawood, which is a composite material that highly popular in the culinary world thanks to its durability and robustness. Made of resin and laminated wood being compressed together by heat, pakkawood has veinings on its surface that create a remarkable resemblance with wood. Pakkawood is also known for its anti-bacterial properties and its resistance to the changes in temperature. For extra protection against humidity and stains, the surface is covered with a layer of varnish.
Comfortable and ergonomic, the handles are suitable for both left and right-handed cooks. The reddish, warm tones on the handle create the perfect contrast with the hammered steel of the blade. At the base (bottom) of the handle, there is an engraving of the Japanese character “Tiger.” The handles of Wusaki knives are a bit longer than the average so that you can hold them better.
Care tips
For the care and maintenance of the knives, we advise you to wash them always by hand using lukewarm water and a mild soap. Dry them with a soft cloth before storing them in a safe place far from humidity. When you receive the knives, the blades are coated with protection oil. To get rid of it, all you need to do is to wash each blade before its first usage.
The roll bag
It is made of black polyester, which is a solid and durable material. It is thick enough to guarantee the safety of the knives stored inside, and at the same time, it is also lightweight enough to let you carry it around in all comfort. It has individual slots to store up to 9 knives with a maximum blade length of 29cm.
The blades are protected by an internal flap that covers them after being attached with the hook-and-loop fastener available inside the bag. On that flap, there are 2 additional pockets where you can store other accessories such as phone chargers or small recipe books. When the bag is open, it measures 48 x 60cm, and when it is closed, it measures 12 x 48.5cm.
