If you are a fan of Japanese cuisine and cutlery, you’ll love to have the Tadafusa Hammer Ton Nakiri Knife in your kitchen! This beautiful Japanese knife will allow you to perform precise and easy cuts on all types of vegetables. Indeed, in Japanese cuisine, nakiri knives are the knives that cooks use to prepare vegetables. Its robust blade makes this knife the perfect tool when it comes to chopping your favourite vegetables.
Who said that the ancient traditional Japanese know-how was simply part of the past? It is true that nowadays most Japanese knife manufacturers have adopted more modern techniques that allow them to make knives in big masses to supply both the Oriental and Western markets. However, it is still possible to find authentic kitchen knives made by true Japanese craftsmen, and the proof of that are the knives made by Tadafusa.
This nakiri knife was forged by hand by true Japanese craftsmen using old techniques that date back to the years in which katanas were being manufactured. Thanks to the care put on each step of the manufacturing process, each detail of this knife illustrates the incredible quality of authentic Japanese cutlery !
The materials that compose this knife are found only in knives of high quality. For example, the type of steel used for the blade is one which you can’t find in Western kitchen knives: SLD steel. This exotic type of steel is characterised for its very high carbon content of 1.5%, which allows the blade to reach a superior hardness rating of 62 HRC in the Rockwell scale.
In fact, the core of the blade is composed of SLD steel, but that core is then surrounded by a layer of soft stainless steel blade. The combination of both types of steel is beneficial for the blade because the characteristics of both complement each other. On one hand, the SLD steel provides strength and robustness, and in the other hand, the soft steel enables a better resistance to corrosion.
Besides its strength, robustness, and rigidness, the characteristic that captures most the attention from this blade is its hammered finish. This feature not only gives a beautiful look to the knife but it also helps to reduce the stickiness between the blade and the food that it cuts. In other words, the hammered finish has more or less the same effect as the Granton edge in a blade, but the hammered finish is still more aesthetically appreciated.
Even if the blade steals the show, the handle of this knife will also dazzle you. It is made chestnut wood, which is a material with great characteristics such as durability and robustness. Moreover, given that the wood has been semi-charred, this handle is also very hygienic. It is connected to the blade through a black synthetic bolster.
Nowadays, most Japanese knife manufacturers have adopted modern manufacturing processes and techniques that enable them to produce knives in big masses. However, Tadafusa is one of the few brands that still today uses some of the ancient Japanese techniques to manufacture kitchen knives of extraordinary quality. Therefore, you can be sure that every Tadafusa knife is truly a piece of authentic Japanese tradition.
