A kaisaki knife is a type of Japanese kitchen knife used for cutting small fish to prepare sashimi. It is in fact a small version of a sashimi or yanagiba knife. This one in particular is characterised for a great cutting performance that lets you cut through the flesh with great ease and precision. This knife is made by the Japanese brand Jikko. With more than a century of experise, Jikko is a brand well appreciated by professional Japanese cooks, because their knives cut extraordinarily well and every detail in their design makes them true pieces of art. With a length of only 12 centimeters, the blade of this knife has a core made of Nihon steel, which is a high quality steel made in Japan with a high carbon content. On top of the Nihon steel core, there is a layer of soft iron, which is visible on the blade’s surface due the difference in colour between the steels.
The blade was manually sharpened by an artisan with a great experience in the sharpening of blades. The sharpening process involves the use of different sharpening stones of different grains. The artisan starts by using a thick, coarse grain, and finishes by using a stone with fine grains 3000. The smooth transition from coarse to fine grains allows the blade to have an excellent sharp finish.
To enhance the look of the blade, the surface has been engraved by the artisan to show the brand’s logo in Japanese. The engraving is directly made by hand using a punch and a small hammer, and because it is truly engraved in the steel and not just stamped, the logo will never fade away. This type of details is what makes Jikko knives stand out from the rest!
Moreover, the handle is made of Magnolia wood, which is a material that is hard and naturally antibacterial. The surface has been polished so that you can enjoy a soft, smooth grip. The handle also has an engraving of the brand’s logo, which gives a unique and authentic touch to the overall knife’s look. Finally, to connect the blade with the handle, the knife has a black bolster made of polycarbonate.
