Blades
They have a hardness level of 60 HRC in the Rockwell scale, and that is in great part thanks to its Japanese VG10 steel core (1% of carbon content). This high level of hardness prevents you from having to sharpen them so frequently. The VG10 steel is highly appreciated in the culinary world because of its great durability and sharp edge retention.
Around the core, there are 67 layers of damask steel. The combination of different layers of steel around the core whilst alternating between hard and soft steel give the blades an original look by creating unique patterns on its surface. The different layers also help the blade to have an optimal balance between hardness and flexibility.
The blades’ look is embellished with an original hammered surface. In fact, each blade is hammered with a press, and this creates patterns on the surface that are unique to each single knife. In addition to the aesthetics benefits, the hammered surface also increases the blade’s non-stick capacity, which allows you to make cleaner cuts (in the case of the santoku knife: the “dimples” on the blade’s edge also help to reduce the blade’s sticikiness).
Another remarkable detail of the blades’ surface is that it has been polished to get a mirror-effect that ends up adding still more cachet to the knife’s look. This comes with a double advantage because the polished surface not only plays an aesthetic role but it also increases the blade’s resistance to corrosion because it flattens the surface thus making it less porous.
Finally, the V-shaped edge allows you to penetrate food without major effort. The blades’ final sharpening was made by hand using a leather band at a total angle of 30° (meaning 15° on each side). The result speaks for itself: ultra sharp edges that penetrate food easily and with great precision!
Handles
The handle is also an important part of each knife. It is made of olive wood that has been treated to have a surface that is soft to touch. This noble wood, which has a fruity scent, makes a beautiful contrast with the metal of the blade, and the veinings on its surface are unique on each knife.
You can hold the handle easily and comfortably thanks to its original and ergonomic shape. As it is the case in all Wusaki kitchen knives, the handle is longer than the average so that it can be easier to manipulate. The final touch of elegance is found on the bottom of the handle where the Japanese character “Tiger” has been engraved by laser.
Care tips
To take good care of the knives, wash them by hand using lukewarm water and mild soap. Then, wipe them with a soft cloth and store them in a dry place. You must also know that when you first receive the knives, the blades will be coated with protection oil. That’s normal, and all you need to do is to wash the blade before you use it for the first time.
When washing the knives, try to avoid as much as possible to wet the handles, because the wood doesn’t like humidity. In fact, to protect and preserve the wood of the handles, we recommend you to wipe them from time to time with a cloth slightly soaked in olive oil.
The bag
It is made of black polyester, which is a solid and durable material. It is thick enough to guarantee the safety of the knives stored inside, and at the same time, it is also lightweight enough to let you carry it around in all comfort. It is perfect for chefs on the go and students in culinary students.
Even though the set only comes with 5 knives, the roll bag has space to store up to 9 knives and accessories. The bag is large enough to store knives with a maximum blade length of 29cm. The blades are protected by an internal flap that covers them after being attached with the hook-and-loop fastener available inside the bag.
